Select, in the heart of the Côte des Blancs, two exceptional grand crus: Le Mesnil sur Oger and Avise. The production conditions for a great Chardonnay, fine and subtle, are given.
100% Chardonnay - 33% wine-veinated wines (oak barrels) with a weekly bazooka - No malolactic fermentation. The cuvée Blanc de Blancs is bottled at low pressure for a rounder and more coated effervescence. It has an average of 5 years of maturation in cavas and a rest of 6 months after slaughter, in order to perfect its maturity. The dosage is adapted to each vintage between 8 and 10 g/l.

Bright colour, intense yellow with green reflections. Soft and regular effervescence, and persistent edging.
Pleasant bouquet of pollen, delicate and fragrant spring flowers, honeysuckle, lily of the valley and lemon tree, associated with more concentrated and candied citrus fruits. Next, there are the toasted notes, peel, cereals and wheat typical of the great Chardonnays of Avize.
